Do any of you have any recipes for a Vegan who avoids veggies from the nightshade family?

Restricting the diet further by avoiding nightshade veggies is going to limit both taste and nutrient intake. However if nightshade plants (tomato, potato, bell pepper, and aubergine) must be avoided then it will be necessary just to adapt recipes.
Choosing other veggies with colour in them is perfectly possible - such as carrots or sweet potato to repace tomato.
Avoiding potato is relatively easy - use brown rice, quinoa, whole wheat flour, buckwheat, millet and amaranth - most of which are more nutritious than potato (especially chips/crisps!).
Instead of bell peppers I'd add more onion and garlic for flavour - make use of herbs and spices to enhance flavours.
For aubergine it is possible to use courgettes, but they will need soaking in salt water for half an hour to extract some of the water in them.
In fact in this challenge it is possible to start inventing new recipes!
