Hi has anyone got a recipe for Courgette Cake. We had some in Rye a couple of days ago and it was gorgeous, much nicer than my usual fav - Carrot Cake.
Hmmm, Courget cake sounds interesting. We've got courgettes as big as marrows coming off our allotment, so we're gonna need to do something with them (one can have too many stir fries hehe!). Cake sounds like a plan.... Now just to find a recipe...

Wow what a coincidence! I made some of this last night! Fooled the kids too!
I googled it & went to the recipe on smallholder.com but there are many others which use other things like carrots, honey, bananas or pineapple with courgettes. I doubled up on quantities because my courgettes have also developed into marrows (!) original quantities - 5oz marge, 3 eggs, 8-10oz sugar all mixed in, 8-10 oz SR flour, add 8oz courgette grated, and some mixed spice/cinnamon - also add raisins if wanted and bake gas mark 5 for bout an hour.

PS - do t forget to peel the courgettes so you don't get a green cake!!
Thank you wispy will have a go at that tomorrow. Although the one we had contained sultanas and some chopped nuts - I spose you can play with the recipe once you have the main ingredients! Very moist, wonder if you can freeze it????:dft011:
With our current glut of courgettes, turned marrows, will have to give this cake recipe a go. Could make & freeze plenty during the summer, to use them all up.
Chargrilled courgette cakes, served with a cool sauce, make a refreshing dish.
1. Preheat the oven to 180°C/fan160°C/ gas 4. Grease and line a 900g loaf tin.
2. Grate the courgette into a sieve and leave for 5 minutes. Squeeze out any excess moisture and set aside.
3. Beat the butter, honey, sugar, vanilla and eggs until smooth. Fold in the lemon juice - it will curdle, but don't worry. Combine the flour with the courgette and almonds. Fold in the butter mixture and the yogurt. If the batter is stiff, add a spoonful more of yogurt. Pour into the tin and bake for 50 minutes, or until golden. Insert a skewer - if it comes out clean, it's done; if not, cook for a further 10-15 minutes. Cool in the tin.
4. Meanwhile, make the icing. Beat the butter and cheese, then beat in the sugar and lime juice. Chill.
5. Turn out the cooled cake and spread with the icing. Sprinkle with some lime zest and cut into slices.
