Chickpea Cake (No! really!!)

Chickpea Cake (No! really!!)

1½ sins on a green day for the whole cake (Following slimming world plan)

tin chickpeas, rinsed & drained

1 tsp baking powder

juice & grated rind of 1 lemon

juice & grated rind 1 orange

2oz canderel

3 eggs.

Line with greaseproof paper and frylight a loaf tin or small cake tin

Preheat oven to 180º /gas mark

Blend the drained chick peas until smooth.

Add baking powder, lemon & orange rind, canderel and eggs, then blend until mixture is smooth and looks like cake mix. (trust me it will)

Transfer mixture to tin and cook at 180º for approx 40 minutes

Turn out cake onto cooling rack and drizzle with lemon & orange juice and allow to cool

I guess you can adapt the flavouring of the cake to suit or make it so its only ½ for the whole cake by omitting the orange juice

I havent made this but one of the girls made it and bought it in to class, wow you have to try it, I dont usally like cake (I am sweet enough ;)) But this was lovely.

If you try these recipies let me know what you tought, this one is defiently worth a try

I can imagine this is gorgeous! I have a recipe for slimming world lemon couscous cake which I was naturally quite dubious about due to to the main ingredient being savoury! But I tried it and loved it, so I will definately try this recipe! Thanks so much.

blinkfairy, the Greek/Cyrpriot version of halva is made from couscous (semolina).

Not sure how similar it is... The halva version uses real sugar to make a syrup: that makes the semolina stick together really well! And it is not baked. You boil sugar in wtaer with spices, than add it on to the semolina -that you have just browned in some oil. Leave it to cool down, and then you can slice it.

Artemis please could i have your recipe for the cake with cous cous it sounds lovely, and i would love some other easy recipes for greek food if you have them.

Sounds nice, apart from the canderel [:'(]. Artificial sweeteners are soooo bad especially things like aspartame which is what canderel is.

At a push I'll eat things with Saccharin in, but not any of the others if I can at all help it. I'd rather eat natural sugars and make sure I do sufficient exercise.

Have made, and enjoyed, your cake recipe. Thought you might like to know of a variation I did yesterday as it is LUSH.
I added grated carrot. nutmeg and cinnamon instead of lemon and orange. Lovely carrot cake. I beat up a tub of quark with some canderel and vanilla essence to put on top of the cake..... Really lovely if you are into carrot cake.
By the way, do you know of a recipe for making humous - slimming world recipe

I'm new here...got this recipe(and stacks more)from the i-village slimming world forum. The members there are really supportive of each other.
HUMMOUS
(Sin Free - Green)
Ingredients;
Juice of half a lemon
Tin of Chickpeas (drained)
Half a pot of VFF Fromage Frais
Half a bunch of Spring Onions Chopped
Seasoning to taste
Method;
Blend all the ingredients together and serve chilled.
